Preparing the Salad

Wash the mesclun greens thoroughly under cold water. Once clean, spin them dry in a salad spinner or gently pat them with a clean kitchen towel to remove excess moisture.

In a dry skillet over medium heat, add the walnuts. Toast them for about 5-7 minutes, stirring occasionally until they are fragrant and lightly browned. Remove from heat and let cool.

Prepare the Ambert Cheese
Cut the Ambert cheese into small cubes or crumble it into chunks, depending on your preference.
Making the Dressing

In a small bowl, whisk together the balsamic vinegar, olive oil, salt, and black pepper until well combined. Adjust salt and pepper to taste.
Assembling the Salad

In a large salad bowl, combine the prepared mesclun greens, toasted walnuts, and Ambert cheese. Drizzle the balsamic vinaigrette over the top.
