Prepare the Gelatin
In a small bowl, combine the gelatin powder with 4 tablespoons of water and let it bloom for about 5 minutes.

Whip the Cream
In a large mixing bowl, whip the heavy cream and granulated sugar together until soft peaks form.

Mix the Citrus
In another bowl, mix the lemon juice and lime zest together.

Combine Ingredients
Warm the gelatin mixture slightly in the microwave until it is fully dissolved, then quickly mix it into the lemon-lime mixture. Fold this into the whipped cream gently until well combined.

Chill
Transfer the mousse into a container and freeze for at least 4 hours or until set.

Prepare the Crumbles
Crumble the lime cake into small pieces and place it in a mixing bowl.

Bake
Spread the mixture onto a baking sheet and bake in a preheated oven at 350°F (175°C) for 10-12 minutes, or until slightly crisp. Let cool.

Prepare the Lemongrass
Slice the lemongrass stalks into small pieces to release their flavor.

Simmer the Ingredients
In a saucepan, combine the dried apricots, sliced lemongrass, and water. Bring to a simmer and let it cook for about 15 minutes until the apricots are tender.

Blend and Strain
Remove from heat and let cool slightly. Blend the mixture until smooth, then strain through a fine mesh sieve to obtain a clear consomme.

Sweeten
Stir in honey while the consomme is still warm, adjusting to taste. Chill before serving.
