Method

Preparing the Salmon

    Marinate the Salmon

    In a small bowl, combine olive oil, salt, black pepper, and lemon juice. Coat the salmon fillets with this marinade and let them sit for about 15 minutes.

    Preheat the Grill

    Preheat your grill to medium-high heat.

    Grill the Salmon

    Place the marinated salmon fillets on the grill. Grill for about 4-5 minutes on each side, or until the salmon is cooked through and flakes easily with a fork.

Preparing the Vegetables

    Prepare the Vegetables

    Wash and cut the asparagus, bell peppers, and zucchini into bite-sized pieces.

    Season the Vegetables

    In a bowl, toss the vegetables with olive oil, salt, and black pepper.

    Grill the Vegetables

    Place the seasoned vegetables on the grill alongside the salmon. Grill for about 5-7 minutes, turning occasionally, until they are tender and have nice grill marks.

Making the Lemon Butter Sauce

    Melt the Butter

    In a small saucepan over medium heat, melt the butter until it is foamy.

    Add Garlic and Lemon Juice

    Add minced garlic to the melted butter and sauté for about 1 minute until fragrant. Then add lemon juice and stir to combine.

    Remove from heat and stir in chopped parsley. Season with salt and black pepper to taste.

Serving

    On each plate, place a grilled salmon fillet, a generous portion of grilled vegetables, and drizzle with the lemon butter sauce.
