Lemon Tarragon Aioli

Method

Preparing the Artichokes

    Trim the Artichokes

    Using a sharp knife, trim the top third of each artichoke and remove the tough outer leaves until you reach the tender inner leaves.

    Remove the Thorns

    Use kitchen scissors to snip off the thorny tips of the remaining leaves.

    Boil the Artichokes

    In a large pot of salted boiling water, add the artichokes and cook for about 20-30 minutes, or until the leaves can be easily pulled off.

    Drain and Cool

    Once cooked, drain the artichokes and let them cool slightly. Cut them in half lengthwise.

    Brush with Lemon and Oil

    Brush the cut sides of the artichokes with olive oil and lemon juice, then season with salt and black pepper.

Grilling the Artichokes

    Preheat the Grill

    Preheat your grill to medium-high heat.

    Grill the Artichokes

    Place the artichoke halves cut-side down on the grill. Grill for about 5-7 minutes until they have nice grill marks.

    Flip and Grill Again

    Flip the artichokes over and grill for another 5-7 minutes until tender.

    Remove from Grill

    Remove the artichokes from the grill and set aside.

Making the Lemon Tarragon Aioli

    Combine Ingredients

    In a medium bowl, combine the mayonnaise, chopped tarragon, minced garlic, lemon zest, salt, and black pepper.

    Mix Well

    Whisk together until all ingredients are well incorporated and smooth.

    Taste and Adjust

    Taste the aioli and adjust the seasoning as needed.

Serving

    Plate the Artichokes

    Serve the grilled artichokes warm, drizzled with olive oil and accompanied by a generous dollop of lemon tarragon aioli.
