Preparation

    Prepare the Horseradish Crema

    In a small bowl, mix together the horseradish, mayonnaise, and Dijon mustard until smooth. Set aside.

    Season the Prime Rib

    Rub the prime rib with salt and pepper to taste. Let it sit at room temperature for about 30 minutes before cooking.

    Cook the Prime Rib

    Preheat your oven to 450°F (230°C). Place the seasoned prime rib on a roasting rack in a roasting pan. Roast in the preheated oven for 20 minutes, then reduce the temperature to 325°F (165°C) and continue cooking for about 1.5 to 2 hours, or until it reaches your desired level of doneness (135°F for medium-rare).

    Rest the Meat

    Once cooked, remove the prime rib from the oven and let it rest for at least 20 minutes before slicing.

    Prepare the Au Jus

    While the meat is resting, pour the beef broth into the roasting pan to deglaze it, scraping up any browned bits. Heat over medium heat until warmed through.

    Slice the Prime Rib

    Thinly slice the rested prime rib against the grain.

    Assemble the French Dip

    Slice the French bread in half lengthwise. Layer the bottom half with sliced prime rib, top with Swiss cheese, and spread a generous amount of horseradish crema on the top half. Close the sandwich.

    Serve

    Serve the sandwich with a small bowl of the warm beef broth (au jus) for dipping. Enjoy!
