Escargots

Method

Preparation of Escargots

  1. 1

    Cleaning the Escargots

If using fresh escargots, soak them in salted water for about 1 hour. Rinse thoroughly and remove any debris. If using canned escargots, simply drain and rinse them.

  2. 2

    Prepare the Parsley Butter

In a mixing bowl, combine the softened butter, finely chopped garlic, parsley, salt, black pepper, and Ricard. Mix until well combined and creamy.

  3. 3

    Fill the Escargot Shells

Place the escargots in their shells and fill each shell with the parsley butter mixture, ensuring they are generously filled.

Cooking

  1. 4

    Baking the Escargots

Preheat the oven to 200°C (400°F). Arrange the filled escargot shells on a baking dish. Bake in the preheated oven for about 10-12 minutes, or until the butter is bubbling and fragrant.

  2. 5

    Serving

Serve the escargots immediately while hot, with crusty bread on the side to soak up the delicious parsley butter.
