    Prepare the Potatoes

    Peel and chop the potatoes into quarters. Boil them in salted water until tender, about 15-20 minutes. Drain and let them cool slightly.

    Mash the Potatoes

    In a large bowl, mash the boiled potatoes until smooth.

    Mix Ingredients

    Add shredded cheddar cheese, chopped green onions, salt, and black pepper to the mashed potatoes. Mix until well combined.

    Form the Croquettes

    Shape the potato mixture into small oval or round patties, about 2 inches in diameter.

    Prepare for Frying

    Set up a breading station with flour, beaten eggs, and breadcrumbs in separate bowls. Dip each croquette in flour, then the egg, and finally coat with breadcrumbs.

    Heat the Oil

    In a deep skillet or fryer, heat oil over medium heat until it reaches 350°F (175°C).

    Fry the Croquettes

    Carefully place the breaded croquettes in the hot oil, frying them in batches until golden brown, about 3-4 minutes on each side. Remove and drain on paper towels.

    Mix the Ingredients

    In a small bowl, combine mayonnaise, Dijon mustard, lemon juice, garlic powder, salt, and black pepper.

    Whisk the ingredients together until smooth and well combined.

    Chill the Crema

    Refrigerate the dijon crema for at least 30 minutes to let the flavors meld together.
