    Muddle the Ingredients

    In a mixing glass, add the demerara sugar and 2 dashes of orange bitters. Use a muddler to crush the sugar and bitters together until the sugar starts to dissolve.

    Add Cognac

    Pour 2 oz of cognac into the mixing glass with the muddled sugar and bitters.

    Add Ice

    Fill the mixing glass with ice cubes, approximately 3, to chill the mixture.

    Stir

    Using a bar spoon, stir the mixture gently for about 30 seconds until well chilled and combined.

    Strain into Glass

    Strain the cocktail into a chilled rocks glass over one large ice cube or several smaller ice cubes.

    Garnish

    Express the oils from the orange peel over the drink by holding it over the glass and giving it a twist. Then, drop the peel into the glass as garnish.
