Cake Ingredients

Method

Preparation of Cake

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C). This ensures that the lava cakes will bake correctly for a molten center.

  2. 2

    Prepare Ramekins

Grease four 6-ounce ramekins with butter and dust with flour to prevent sticking. Set aside.

  3. 3

    Melt Butter and Chocolate

In a medium saucepan, melt the unsalted butter and semi-sweet chocolate chips over low heat, stirring until smooth. Remove from heat and let it cool slightly.

  4. 4

    Mix Eggs and Sugar

In a mixing bowl, whisk together the granulated sugar, large eggs, and large egg yolks until well combined.

  5. 5

    Combine Mixtures

Gradually add the melted chocolate mixture to the egg mixture, whisking continuously until smooth.

  6. 6

    Add Vanilla and Flour

Stir in the vanilla extract, all-purpose flour, and a pinch of salt. Mix until just combined.

  7. 7

    Fill Ramekins

Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.

Baking

  1. 8

    Bake the Cakes

Place the ramekins on a baking tray and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is soft.

  2. 9

    Cool and Serve

Remove from the oven and let the cakes cool for 1 minute. Carefully invert them onto plates and serve immediately with a scoop of vanilla ice cream and a dusting of powdered sugar.
