For the Chocolate Fondant

Method

Preparation of the Fondant

    Melt Chocolate and Butter

    Preheat your oven to 200°C (400°F). In a heatproof bowl, combine the dark chocolate and unsalted butter. Set the bowl over a saucepan of simmering water (double boiler) and stir until melted and smooth. Remove from heat and let it cool slightly.

    Whisk Eggs and Sugar

    In a separate bowl, whisk together the eggs, egg yolks, and granulated sugar until the mixture is pale and thick. This should take about 3-4 minutes.

    Combine Mixtures

    Pour the melted chocolate and butter mixture into the egg mixture. Add the vanilla extract and a pinch of salt. Gently fold to combine.

    Add Flour

    Sift in the all-purpose flour and carefully fold it into the mixture until just combined. Be careful not to overmix.

    Prepare Ramekins

    Grease four ramekins with butter and dust with flour, shaking off any excess. This will help the fondants release easily after baking.

    Fill Ramekins

    Divide the batter evenly among the prepared ramekins, filling them about 3/4 full.

    Bake

    Bake in the preheated oven for 10-12 minutes, or until the edges are set but the center remains soft. The tops should look slightly cracked.

    Cool Slightly

    Remove from the oven and let the fondants cool for 1-2 minutes before inverting onto plates.

Serving

    Plate the Fondant

    Carefully invert each fondant onto a serving plate. You can tap the ramekin gently to release the fondant if needed.

    Add Ice Cream

    Serve each fondant warm with a scoop of vanilla ice cream on the side.

    Garnish (Optional)

    If desired, add fresh berries around the fondant for a touch of color and extra flavor.
