Method
Prepare vegetables
Cook aromatics
Add the minced garlic and ginger and cook, stirring constantly, for 30–45 seconds until fragrant but not browned.
Add spices & vegetables
Lower heat to medium-low and add 1 teaspoon ground turmeric and the optional 1 teaspoon ground cumin. Stir to coat the onions, garlic, and ginger, toasting the spices about 20–30 seconds to release their aroma.
Season with 1 teaspoon salt and 1 teaspoon black pepper. Continue to cook, stirring occasionally, for 8–10 minutes, allowing the cabbage to soften and wilt but still retain a slight bite. If the pan becomes dry or the vegetables begin to stick, sprinkle 1–2 tablespoons of water and stir to deglaze. Cover for 2–3 minutes if you prefer a more tender result, then uncover and cook off excess moisture.
Finish & serve
When the cabbage and carrots are cooked to your liking (tender-crisp to fully tender, about 10–12 minutes total from when vegetables were added), remove the pan from heat. Stir in 1 tablespoon lemon juice or white wine vinegar to brighten the flavors.
Taste and adjust seasoning with additional salt, pepper, or a pinch of red pepper flakes if using. Sprinkle chopped cilantro or parsley on top if desired.
Serve warm as a side dish with rice, injera, flatbread, or alongside proteins. Leftovers refrigerate well for up to 3 days.
