Make syrup
Combine 1 cup water, 1 cup sugar, 4 oz sliced fresh ginger, 1 tsp ground cinnamon and 2 whole cloves (if using) in a small saucepan over medium heat.
Bring the mixture to a gentle simmer, stirring to dissolve the sugar. Once simmering, reduce heat to low and let gently simmer for 8–10 minutes to extract ginger flavor.
Remove the pan from heat. Stir in 2 tablespoons fresh lemon juice. Let the syrup steep for 15–20 minutes off the heat for more intensity.
Strain the syrup through a fine-mesh sieve into a clean container, pressing the solids to extract as much liquid as possible. Discard solids. Cool syrup to room temperature, then refrigerate until chilled. Yields about 1 to 1 1/4 cups syrup.

Fill 4 tall glasses with 1/2 cup ice each (about 2 cups total ice). For each serving (makes 4), add 2 tablespoons chilled ginger syrup per 8-ounce glass.
Top each glass with 1 cup (8 fl oz) chilled club soda or sparkling water. Gently stir once to combine so carbonation isn't lost.
Serve immediately. Store leftover ginger syrup refrigerated for up to 2 weeks; shake before using.
