Heat milk

Pour 1.5 liters whole milk into a heavy-bottomed saucepan. Add 120 ml heavy cream for a creamier curd. Warm gently over medium heat, stirring occasionally, until it reaches 82–85°C (180–185°F) and small bubbles appear around the edges but before a full boil.

Acidify and separate curds

Remove the pan from heat. Add 3 tablespoons white vinegar (or lemon juice) in two additions, stirring gently after each, then let the milk sit undisturbed for 5–10 minutes. You should see the milk separate into curds (solid) and whey (yellowish liquid). If separation is incomplete, add up to 1 more tablespoon acid and wait another 3–5 minutes.

Strain curds

Line a colander with a double layer of fine cheesecloth or a very fine-mesh sieve placed over a large bowl. Carefully pour the curds and whey into the colander, letting the whey drain. Gather the cheesecloth and gently squeeze to remove excess whey, but don’t press too hard—leave some moisture for soft cottage curds. Drain for 15–20 minutes until desired moisture.

Rinse and rest (optional)

For a milder, less acidic finish, rinse the curds under cold running water briefly while they’re in the colander, then let drain another 5 minutes. Transfer drained curds to a bowl and stir in 1 teaspoon kosher salt to season evenly.

Prepare aromatics

While the curds are draining, finely mince 1 green chili (remove seeds if you want less heat), mince 1 garlic clove, thinly slice 1 scallion, and finely chop about 2 tablespoons cilantro.

Combine spices and herbs

In a small bowl, whisk together 1 teaspoon olive oil, 1 teaspoon fresh lemon juice, 1 tsp red chili flakes, 1/2 tsp smoked paprika, 1/4 tsp ground cumin, and 1/4 tsp black pepper. Add the minced chili, garlic, scallion, and cilantro, stirring to combine. Taste and adjust: add more chili flakes or smoked paprika for heat, or a pinch more salt if needed.

Fold into curds

Gently fold the spicy mixture into the drained cottage curds until evenly distributed. Be careful not to mash the curds — aim to coat and distribute flavor while keeping curds distinct. If the mixture seems dry, stir in up to 1–2 tablespoons of reserved whey or an extra teaspoon of cream to achieve desired creaminess.

Finishing and Serving

Adjust seasoning: taste and add more salt, lemon juice, or a touch of honey (optional) to balance heat. For a glossy finish, drizzle 1 teaspoon chili oil over the top or swirl it into the cheese.

Chill: refrigerate at least 30 minutes to let flavors meld. Cottage cheese can be served cold or at cool room temperature. Store in an airtight container in the refrigerator for up to 4 days.
