Method
Rice
Rinse and toast (optional)
Rinse the 1.5 cups of long-grain white rice in a fine-mesh sieve under cold running water until the water runs clear to remove excess starch. Shake off excess water. Heat 1 tablespoon olive oil in a medium saucepan over medium heat; add the rinsed rice and toast, stirring, for 1–2 minutes until slightly translucent and fragrant.
Add 3 cups water and 1/2 tsp salt to the saucepan. Increase heat to high and bring to a gentle boil. Once boiling, reduce heat to low, cover with a tight-fitting lid, and simmer undisturbed for 15 minutes (check package instructions and adjust if using another rice type).
After 15 minutes, remove the saucepan from heat and keep covered. Let rice rest for 5–10 minutes to finish steaming; do not lift the lid during resting.
Vegetables & Mix-ins
While rice cooks, place 1/2 cup peas, 1/2 cup diced carrots, and 1/2 cup lima beans in a microwave-safe bowl with 1–2 tablespoons water and microwave on high for 1–2 minutes until thawed and just tender. Alternatively, blanch in boiling water for 1–2 minutes then drain and shock in cold water. Drain thoroughly to avoid adding excess moisture to the rice.
If you prefer to sauté for extra flavor: heat 1 tablespoon butter or olive oil in a skillet over medium heat, add the thawed vegetables and sauté 2–3 minutes until warmed through and slightly glazed. Season lightly with a pinch of salt and pepper.
Seasoning & Balsamic
In a small bowl, whisk together 2 tablespoons balsamic vinegar, 1/2 cup broth, 1 tablespoon butter or olive oil, 1/2 tsp garlic powder, 1/2 tsp onion powder, 1/4 tsp black pepper, 1/2 tsp dried parsley, and 1/2 tsp optional sugar or honey. The small amount of broth tempers the vinegar and creates a lightly saucy coating for the rice.
When the rice has finished resting, remove the lid and fluff gently with a fork to separate grains. Transfer the rice to a large mixing bowl or keep in the saucepan if roomy.
Stir the warmed vegetables into the fluffed rice so they distribute evenly.
Pour the balsamic-broth mixture over the rice and vegetables in two additions, gently tossing with a fork or spatula after each addition to evenly coat the grains without mashing. Taste and adjust seasoning: add a pinch more salt or 1/2 tsp more balsamic if you want more acidity.
Finish & Serve
Transfer the balsamic rice to a serving bowl. If using, sprinkle 1 tablespoon chopped fresh parsley and 1/2 tsp lemon zest over the top for brightness.
Serve warm as a side dish. Leftovers keep well refrigerated in an airtight container for up to 3 days; reheat covered with a splash of water or broth to restore moisture.
