Sega Wot (Spicy) Preparation
Prepare beef
Trim any excess fat from the beef and cut into uniform 1/2-inch cubes. Pat dry with paper towels and place in a mixing bowl.
Add spices
Lower heat to medium-low. Add berebere spice and continue to cook, stirring constantly, for 1 minute to bloom the spices. If mixture becomes too dry, add up to 1–2 tbs water to loosen.
Combine beef and seasoning
Transfer the cooked onion-spice mixture to the bowl with the cubed beef. Add remaining 1 tbs nit'r qibe, lemon juice, salt and black pepper. Toss thoroughly to coat all beef pieces with the spiced butter and onion mixture. Taste and adjust salt or berebere (if you want more heat add a pinch more).
Marinate briefly
Cover and let marinate at room temperature for 15–20 minutes (traditional sega wot is served raw or very lightly warmed; this brief marination lets flavors meld). If you prefer your beef slightly warmed, briefly (30–45 seconds) warm the coated beef in a hot skillet over high heat just to take the chill off—do not cook through.
Sega Wot Alecha (Mild) Preparation
Prepare beef
Trim and cut the beef into 1/2-inch cubes. Pat dry and place in a clean bowl.
Make mild onion-turmeric base
In a small skillet over medium heat, melt unsalted butter. Add the mild onion (very finely minced) and cook gently until soft but not browned, about 6–7 minutes. Add minced garlic and grated ginger and cook 30 seconds. Stir in turmeric and tomato paste and cook 30–45 seconds to combine. If the mixture seems dry, add 1 tbs water.
Plating and Serving
On a large communal platter or individual plate, place a portion of Sega Wot (spicy) on one side and Sega Wot Alecha (mild) on the other, leaving some space between them so guests can taste each separately.
Provide utensils or use pieces of injera to pick up the beef. Encourage tasting both variations to experience the contrast between the spicy berebere-forward Sega Wot and the turmeric-scented mild Alecha.
Estimated serving: this recipe makes enough for 3–4 people as part of a multi-dish meal, or 2 people if served as a main with injera.
