Prepare lentils

Rinse 2 cups red split lentils under cold water until the rinse runs clear. Drain well.

Cook aromatics

Heat a medium saucepan or heavy-bottomed pot over medium heat. Add 3 tablespoons niter kibbeh (or unsalted butter). Once melted and shimmering, add 1 cup finely chopped onion. Sauté, stirring often, until the onions are soft and translucent (8–10 minutes). If they begin to stick, add up to 2 tablespoons water to deglaze the pan.

Add garlic & ginger

Stir in 4 minced garlic cloves and 1 tablespoon minced fresh ginger. Cook 1–2 minutes until fragrant, stirring constantly to avoid burning.

Bloom the spices

Lower heat to medium-low. Add 2 tablespoons berbere spice and 1 teaspoon paprika to the aromatics. Stir constantly for 1 minute to bloom the spices in the fat; this develops deep flavor. If the mixture becomes too dry, add a teaspoon of water.

Add tomato

Stir in 2 tablespoons tomato paste and cook 1–2 minutes, mixing thoroughly with the spiced onion mixture until it darkens slightly.

Simmer lentils

Add the rinsed lentils and 4 cups water or vegetable broth. Increase heat to bring to a gentle boil, then reduce to a simmer. Add 1 teaspoon salt and 1 teaspoon black pepper. Partially cover and simmer, stirring occasionally, for 20–25 minutes until lentils are very tender and begin to break down. If too thick, add hot water 1/4 cup at a time to reach a thick, spoonable stew consistency.

Mash and finish

For a smoother wot texture, use a potato masher or the back of a spoon to gently mash some lentils against the pot sides. Taste and adjust seasoning—add additional salt or berbere if desired. Stir in 1 teaspoon lemon juice (optional) to brighten flavors. Keep warm on lowest heat while preparing salad and plating.

House Salad

Combine 4 cups chopped greens, 1 cup diced tomato, 1 cup diced cucumber, and 1/4 cup thinly sliced red onion in a medium bowl.

Whisk together 2 tablespoons fresh lemon juice, 1 tablespoon extra-virgin olive oil, 1/2 teaspoon salt, and 1/4 teaspoon black pepper in a small bowl. Pour dressing over the salad and toss gently to combine. Taste and adjust seasoning.

To Serve

Warm injera briefly on a griddle or in a low oven (about 1–2 minutes each side) if desired. Place injera on individual plates or a communal platter.

Spoon a generous portion of Meser Wot onto the injera. Serve house salad on the side. Garnish the lentils with chopped cilantro or parsley if using.

Serve immediately. Traditional eating: tear off a piece of injera and use it to scoop up the lentils and salad.
