Method
Meser Wot (Red Lentil Stew)
Prepare lentils
Rinse 2 cups red split lentils under cold water until the water runs mostly clear. Drain and set aside.
Sauté aromatics
In a large, heavy-bottomed saucepan or Dutch oven, heat 3 tbs neutral oil over medium heat until shimmering. Add 1.5 cups finely chopped onion and cook, stirring often, until soft and deep golden (about 12–15 minutes). Lower the heat if onions begin to brown too quickly—this slow browning develops the stew's sweet base.
Add garlic and ginger
Add 4 minced garlic cloves and 1 tbs grated fresh ginger to the onions and cook 1–2 minutes until fragrant, stirring constantly to prevent burning.
Bloom the spices
Stir in 2 tbs berbere spice and 2 tbs tomato paste. Cook, stirring, 2–3 minutes so the spices toast slightly and the tomato paste caramelizes—this deepens flavor and removes raw tomato taste.
Add tomatoes and fats
Add 1 cup finely chopped fresh tomato (or canned crushed tomato) and 2 tbs unsalted butter or niter kibbeh. Stir to combine and simmer 3–4 minutes to meld flavors.
Cook lentils
Add the rinsed lentils and 4 cups water or vegetable broth to the pot. Increase heat to bring to a gentle boil, then reduce to low and simmer, partially covered, stirring occasionally to prevent sticking. Cook for 20–25 minutes until lentils are very soft and beginning to break down.
Adjust texture
If the stew is too thick, add up to 0.5–1 cup additional water or broth to reach a creamy, spoonable consistency. If too thin, simmer uncovered for a few minutes until it thickens to your liking.
Injera (serving)
Warm injera on a skillet or covered plate just before serving if using store-bought. Place one or two pieces on each serving plate and spoon a generous portion of the warm Meser Wot onto the injera. Injera is used as both plate and utensil—tear pieces and scoop the stew.
