Lentils & Broth
Rinse and cook lentils
Rinse 2 cups red split lentils under cold water until the water runs clear. Drain. In a large saucepan or medium pot, combine the rinsed lentils and 6 cups water or vegetable broth. Bring to a boil over high heat, then reduce to a simmer. Skim any foam from the surface. Partially cover and simmer gently while you prepare the aromatic base, about 15–20 minutes, until lentils are very tender and starting to break down.
When lentils are tender, mash lightly with the back of a wooden spoon or an immersion blender to achieve a thick, cohesive stew texture. Keep warm on very low heat while finishing the sauce.
Taste and season with 1.5 tsp kosher salt, adjusting later after combining with the spice base.
Aromatic Base
Cook onions, garlic, and ginger
Heat 3 tbs neutral oil in a large skillet or shallow saucepan over medium heat. If using niter kibbeh or butter, add 1 tbs along with oil. Add the 1.5 cups finely chopped onion and a pinch of salt. Cook, stirring occasionally, until the onions are soft and deeply translucent and starting to brown at the edges, about 10–12 minutes. Reduce heat if onions brown too quickly.

Bloom spices and build sauce
Stir in 3 tbs berbere and 1 tbs paprika into the onion mixture and cook, stirring constantly, 1–2 minutes to bloom the spices. Add 2 tbs tomato paste and cook another 2–3 minutes, stirring, until the tomato paste darkens slightly and the oil begins to turn reddish; this helps deepen the flavor. Sprinkle in 0.5 tsp turmeric, 0.5 tsp black pepper, and optional 0.25 tsp ground fenugreek; stir and cook 30–60 seconds to toast the ground spices.
If the spice mixture looks too dry or is sticking, add 3–6 tablespoons of the reserved cooking liquid from the lentils (or water/broth) to loosen it and create a smooth, saucy consistency.
Combine & Finish
Combine lentils and spiced sauce
Add the mashed cooked lentils into the skillet with the spiced onion-tomato mixture. Stir thoroughly to combine, adding additional cooking liquid 1/4 cup at a time if needed to reach a thick stew-like consistency. Simmer together for 5–8 minutes so the flavors meld. Taste and adjust seasoning; add more salt if needed.
Stir in 1 tbs lemon juice or red wine vinegar to brighten the stew. Adjust acidity to taste.
If you like a richer finish, swirl in a little extra 1 tsp oil or a pat of butter/niter kibbeh right before serving.
Garnish & Serve
Transfer Meser Wot to a serving bowl. Sprinkle 0.5 tsp extra berbere and 0.25 tsp freshly ground black pepper over the top. Garnish with 2 tbs chopped cilantro or parsley, if using.
Serve hot with injera, rice, or flatbread. Meser Wot thickens as it cools; if necessary, thin with a little hot water or broth when reheating.
