Prep chickpeas
If using canned chickpeas, drain them, reserving 2–3 tablespoons of the liquid (aquafaba). For extra-silky hummus, optionally peel skins by pinching each chickpea between fingers (takes longer but smooths texture).
Add garlic and seasoning
Add the roughly chopped garlic, ground cumin, kosher salt, and ground black pepper to the whipped tahini-lemon mixture. Process another 15–20 seconds to combine.
Incorporate chickpeas
Add the drained chickpeas to the food processor. With the motor running, slowly drizzle in 2 tablespoons of olive oil. Process until a coarse paste forms (about 30–60 seconds).
Adjust texture
With the processor running, add cold water or reserved chickpea liquid, one tablespoon at a time, until the hummus reaches desired silkiness (usually 2–3 tablespoons). Continue processing 1–2 minutes for a very smooth result, scraping down the bowl as needed.
Taste and balance
Stop and taste. Add more salt, lemon juice (½–1 tbs), or cumin if needed. If too thick, add up to 1 additional tablespoon of water or aquafaba and process again to incorporate.

Transfer the hummus to a shallow serving bowl, smoothing the top with the back of a spoon to create a shallow well in the center.
Drizzle 1 tablespoon extra-virgin olive oil over the surface, sprinkle paprika (or smoked paprika) and chopped parsley, and scatter toasted pine nuts or a pinch of za'atar if using.
Serve immediately with pita, fresh vegetables, or use as a sauce for bowls, sandwiches, or grilled vegetables. Store any leftovers in an airtight container in the refrigerator for up to 4–5 days; stir before serving and adjust seasoning if needed.
