Preparation of Offal

Clean and trim

Rinse the liver, heart, and lung under cold running water. Trim away membranes, large blood vessels, and any excess fat. Pat dry with paper towels.

Soak (optional, to reduce strong flavor)

Place the liver pieces in a bowl and cover with cold water and 1 tablespoon of vinegar. Soak 20–30 minutes in the refrigerator, then drain and pat dry. If using lung, blanch it briefly in boiling water for 2–3 minutes, then drain and rinse under cold water.

Dice

Using a sharp knife, cut the liver, heart, and lung into small 1/2–3/4 inch (1–2 cm) bite-sized pieces. Uniform size ensures even cooking.

Peel and finely chop the onion. Mince the garlic cloves. Remove seeds and ribs from ají amarillo or chile if you want milder heat, then finely chop. Chop the cilantro and parsley and set aside.

Cooking Dulet

Render fat and sweat aromatics

In a large heavy skillet or sauté pan over medium heat, add the 50 g of tallow or butter. When hot, add the chopped onion and a pinch of salt. Cook, stirring occasionally, 5–7 minutes until the onion is translucent and starting to brown. Add the minced garlic and chopped chile and cook 1–2 minutes until fragrant, taking care not to burn the garlic.

Brown the offal

Increase heat to medium-high. Add the diced heart and lung first (if using). Cook, stirring, 3–4 minutes until they begin to brown on the edges. Add the diced liver and spread meat in an even layer. Let sit undisturbed 1–2 minutes to get some color, then stir and continue to cook 4–6 minutes until pieces are browned but still tender inside. Avoid overcooking liver, which becomes grainy.

Season and deglaze

Sprinkle the cumin, paprika (or aji panca), oregano, ground pepper, and the remaining 1/2 teaspoon salt over the mixture. Stir to coat. Pour in the 2 tablespoons vinegar and 1 tablespoon lime or lemon juice, scraping the pan bottom to deglaze and lift any browned bits. Cook 1–2 minutes to let the acid mellow and flavors combine.

Finish with herbs

Add the chopped cilantro and parsley, mixing them through the hot dulet. Taste and adjust seasoning with more salt, pepper, or a squeeze of lime if needed. Remove from heat.

Serve

Plate the dulet hot alongside steamed white rice, boiled potatoes, or toasted cancha. Garnish with sliced red onion and extra chopped cilantro. Serve immediately while warm.

Leftovers: Cool to room temperature, refrigerate in an airtight container up to 2 days. Reheat gently in a skillet with a splash of water or oil to avoid drying out.
