Marinate chicken
Pat the chicken legs dry with paper towels. In a large bowl combine chicken legs, 3 tbsp fresh lemon juice and 2 tsp kosher salt. Toss to coat evenly. Cover and refrigerate for 30–60 minutes (or up to 2 hours).
Berbere Sauce Base and Aromatics
Brown onions slowly
Heat a large heavy-bottomed pot or Dutch oven over medium-low heat. Add 6 tbsp niter kibbeh (or unsalted butter). When melted and shimmering, add the minced onions. Cook the onions slowly, stirring frequently, for 20–30 minutes until deep golden brown and reduced — this slow caramelization gives authentic depth to the wot. If the pan gets dry add 1–2 tbsp water as needed to prevent burning.
Incorporate spices and tomato
Stir in 4 tbsp berbere and 1 tbsp paprika and cook for 1–2 minutes to bloom the spices in the fat. Add 3 tbsp tomato paste and cook, stirring, for another 2 minutes to deepen the tomato flavor.
Deglaze & build sauce
Pour in 2 cups chicken stock (or water) and scrape up any browned bits from the bottom of the pot. Bring the mixture to a gentle simmer and let it cook uncovered for 5 minutes to meld flavors. Taste and add 1 tsp freshly ground black pepper and the optional minced fresh chili if you want extra heat.
Brown the marinated chicken
Increase heat to medium-high. Add the marinated chicken legs in a single layer, skinless side down; brown for 3–4 minutes per side, turning so each piece gets color. You may need to do this in two batches to avoid crowding. Return all browned pieces to the pot.
Simmer gently
Reduce heat to low so the sauce barely simmers. Cover the pot partially and cook for 30–35 minutes, turning the chicken once halfway, until the chicken is cooked through and tender (internal temperature at thickest part should be 74°C / 165°F). If the sauce becomes too thick, add up to 1/2 cup more stock or water. If the sauce is too thin, simmer uncovered a few minutes to thicken.
Eggs & Cottage Cheese Accompaniment
Make quick cottage cheese (letfit / ayib-style)
Pour 1 cup whole milk (or buttermilk) into a small saucepan and heat to just below simmer (steam rising, small bubbles at edge). Remove from heat and stir in 1 tbsp lemon juice and 1 tsp salt. Let sit 10 minutes until curds form. Line a fine-mesh sieve with cheesecloth and strain the curds; gather and gently press to remove excess whey. Chill briefly if desired. This produces a fresh, slightly tangy cottage cheese (ayib) to accompany the doro wot.
Finishing & Garnish
Finish and plate
Taste the stew and adjust seasoning with additional salt or berbere to taste. Place the tender chicken legs on a shallow serving bowl, spoon generous amounts of the thick red berbere sauce over them. Nestle 1 halved or whole hard boiled egg per serving into the sauce. Add a spoonful of the fresh cottage cheese beside the chicken.
