Kalamata Powder

Method

Whipped Labneh

  1. 1

    Prepare the Labneh

In a bowl, combine the labneh, olive oil, minced garlic, lemon juice, salt, and black pepper. Whip until smooth and creamy. Set aside.

Herb Fried Homemade Pita

  1. 2

    Make the Dough

In a bowl, mix warm water, yeast, and sugar. Let it sit for 5 minutes until foamy. In a large bowl, combine flour and salt. Add the yeast mixture and olive oil. Knead until a smooth dough forms.

  2. 3

    Rest the Dough

Cover the dough with a cloth and let it rise in a warm place for 1 hour or until doubled in size.

  3. 4

    Shape and Fry the Pita

Divide the dough into small balls. Roll each ball into a flat circle. Heat olive oil in a skillet over medium heat. Fry each circle until golden brown on both sides. Sprinkle with mixed herbs while frying.

Charred Maitake Mushroom

    Cook the Mushrooms

In a skillet, heat olive oil over high heat. Add maitake mushrooms, season with salt and black pepper. Cook until charred and crispy, about 5-7 minutes.

Herb Honey

  1. 6

    Prepare the Herb Honey

In a small bowl, mix honey with finely chopped mixed herbs.

Kalamata Powder

  1. 7

    Make Kalamata Powder

Blend the Kalamata olives in a food processor until a fine powder is achieved.
