Preparation Steps

Prepare the Lobster
Bring a large pot of salted water to a boil. Add the whole lobster and cook for 8-10 minutes until it turns bright red. Remove and let cool. Once cooled, crack the shell and remove the meat, reserving the claws and tails intact.

Prepare the King Crab
If using frozen King Crab legs, thaw them overnight in the refrigerator. Steam for 5-7 minutes until heated through. Cut the legs open to expose the meat.

Prepare the Shrimp
Peel and devein the shrimp. Bring a pot of salted water to a boil and cook the shrimp for 2-3 minutes until they turn pink. Drain and chill in ice water.

Prepare the Oysters
Shuck the oysters and place them on a bed of crushed ice. Keep them cold until serving.

Prepare the Hamachi Crudo
Slice the Hamachi into thin sashimi-style pieces. Arrange them on a plate and drizzle with a little olive oil and sprinkle with Maldon sea salt.

Make the Yuzu Mignonette
In a small bowl, mix together 1/4 cup of yuzu juice, 1/4 cup of finely chopped shallots, and a pinch of salt. Let it sit for 15 minutes to allow the flavors to meld.

Assemble the Seafood Tower
On a large platter or tiered serving dish, arrange the lobster, crab legs, shrimp, oysters, and Hamachi in an aesthetically pleasing manner. Serve with the yuzu mignonette on the side and sprinkle the Plankton Maldon sea salt over the seafood.
