Prepare the Kataifi
Preheat the oven to 180°C (350°F). Melt the unsalted butter in a small saucepan. Unravel the kataifi pastry and separate it into strands. Brush a baking dish with some melted butter, layer the kataifi strands in the dish, and drizzle with more butter. Bake in the preheated oven for 15-20 minutes or until golden brown.

Make the Brie Sabayon
In a mixing bowl, whisk together the egg yolks, sugar, and vanilla extract until well combined. Place the bowl over a pot of simmering water (double boiler) and whisk continuously until the mixture thickens and doubles in volume. Remove from heat and fold in the brie cheese until melted and smooth.

Prepare the Guava Sauce
In a small saucepan, combine the guava paste and water. Heat over medium heat, stirring until the guava paste has dissolved and the sauce is warm and smooth.

Assemble and Serve
Once the kataifi is baked, remove it from the oven and let it cool slightly. Cut into portions and serve warm, topped with the brie sabayon and drizzled with warm guava sauce.
