Cooking the Chicken

Poach the Chicken
In a large pot, bring enough water to a boil to cover the chicken breasts. Add a pinch of salt. Gently add the chicken breasts to the boiling water, reduce heat to a simmer, and cook for about 15-20 minutes, or until the chicken is fully cooked and no longer pink in the center.

Making the Salad

Combine Ingredients
In a large mixing bowl, combine the shredded chicken, Duke's mayonnaise, finely chopped celery, and Tabasco sauce. Stir well until all ingredients are evenly coated with mayonnaise.

Season to Taste
Taste the chicken salad and add additional Tabasco sauce or salt to enhance the flavor, if desired.
Serving the Chicken Salad

Prepare Croissants (Optional)
If serving as a sandwich, slice the croissants in half to prepare for the filling.

Assemble the Salad
Spoon the chicken salad onto the bottom half of the croissant. Top with a lettuce leaf and then place the top half of the croissant on top. Alternatively, serve the chicken salad on a bed of lettuce on a plate.
