Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

Combine Broth and Tomatoes
Pour in 4 cups of vegetable broth and add the diced tomatoes. Stir to combine.

Add the bay leaf, salt, and black pepper to the pot. Bring the mixture to a boil, then reduce heat to low and let it simmer for about 20 minutes.

Remove the bay leaf and taste the soup. Adjust seasoning if necessary before serving.

In a bowl, combine the roasted and chopped red bell peppers, minced garlic, red wine vinegar, olive oil, sugar, salt, and black pepper.
