    Prepare the Meats

    Choose your preferred meat (bacon, sausage, or ham). If using bacon, cut it into strips. For sausage, shape into patties or leave whole based on preference. For ham, slice it into thick pieces.

    Mix Spices

    In a small bowl, combine black pepper, smoked paprika, garlic powder, onion powder, and brown sugar. Mix well until combined.

Smoking

    Prepare the Smoker

    Soak hickory wood chips in water for at least 30 minutes. Preheat the smoker to 225°F (107°C).

    Season the Meats

    Rub the spice mixture evenly over the bacon, sausage, or ham. Ensure all sides are coated well.

    Smoke the Meats

    Place the seasoned meats in the smoker. Add the soaked hickory chips to the smoker box or directly onto the coals. Smoke for about 2-3 hours, or until the internal temperature of the sausage reaches 160°F (71°C) and bacon is crispy.

Serving
