Prepare the Meats
Choose your preferred meat (bacon, sausage, or ham). If using bacon, cut it into strips. For sausage, shape into patties or leave whole based on preference. For ham, slice it into thick pieces.

In a small bowl, combine black pepper, smoked paprika, garlic powder, onion powder, and brown sugar. Mix well until combined.

Prepare the Smoker
Soak hickory wood chips in water for at least 30 minutes. Preheat the smoker to 225°F (107°C).

Rub the spice mixture evenly over the bacon, sausage, or ham. Ensure all sides are coated well.
