Method

Prepare the Grits

  1. 1

    Cook the Grits

In a large saucepan, bring 4 cups of water to a boil. Add 1 cup of Adluh grits and 1 teaspoon of salt, stirring frequently. Reduce the heat to low and cover the pot. Cook for about 20-25 minutes or until the grits are thickened, stirring occasionally.

  2. 2

    Finish the Grits

Once the grits are cooked, stir in 2 tablespoons of butter and 1 cup of shredded cheddar cheese until melted and well combined. Keep warm.

Cook the Sausage

  1. 3

    Brown the Sausage

In a large skillet, heat over medium heat. Add 1 pound of Italian sausage, breaking it apart with a spoon. Cook for about 5-7 minutes, until browned and cooked through.

Prepare the Shrimp

  1. 4

    Sauté the Shrimp

In the same skillet with the cooked sausage, add 2 tablespoons of olive oil, 3 minced garlic cloves, and cook for about 1 minute until fragrant. Then add 1 pound of jumbo shrimp, 2 tablespoons of lemon juice, 1 teaspoon of salt, 1 teaspoon of black pepper, and 1 teaspoon of red pepper flakes. Cook for about 3-4 minutes or until the shrimp are pink and opaque.

Serve

  1. 5

    Plate the Dish

To serve, spoon a generous portion of the creamy grits onto each plate. Top with the sautéed shrimp and sausage mixture. Garnish with 2 tablespoons of chopped parsley and serve with lemon wedges on the side.
