Prepare Tomatoes

Roast the Tomatoes
Preheat your oven to 400°F (200°C). Slice the Roma tomatoes in half lengthwise and place them cut side up on a baking sheet. Drizzle with olive oil and sprinkle salt and black pepper evenly over the top.

Bake
Roast the tomatoes in the preheated oven for about 25-30 minutes, until they are soft and slightly caramelized. Remove from the oven and let cool slightly.

Add Basil
Once the tomatoes are cool enough to handle, sprinkle fresh basil leaves over the top.
Prepare the Cheese

Slice the Cheese
While the tomatoes are roasting, slice the mozzarella and smoked provolone cheese into even pieces, about 1/4 inch thick.
Assemble and Toast

Prepare the Ciabatta
Slice the ciabatta bread in half horizontally. Place the bottom half on a baking sheet.

Layer the Ingredients
Layer the roasted tomatoes evenly over the ciabatta, followed by slices of mozzarella and smoked provolone cheese.

Toast in Oven
Place the assembled ciabatta in the oven and toast for an additional 10-15 minutes, or until the cheese is melted and bubbly, and the bread is golden brown.
Serve

Remove the ciabatta from the oven and let it cool for a minute. Cut into halves or quarters and serve warm.
