Method

Preparation

  1. 1

    Preheat the oven

Preheat your oven to 350°F (175°C) to prepare for baking the granola.

  2. 2

    Prepare baking sheet

Line a large baking sheet with parchment paper to prevent the granola from sticking.

Mixing Ingredients

  1. 3

    Combine dry ingredients

In a large mixing bowl, combine the rolled oats, chopped pecans, dried cranberries, ground cinnamon, and salt. Stir well to mix evenly.

  2. 4

    Mix wet ingredients

In a separate bowl, whisk together the molasses, honey (or maple syrup), vegetable oil, and vanilla extract until smooth.

  3. 5

    Combine wet and dry mixtures

Pour the wet mixture over the dry ingredients and stir until all the dry ingredients are evenly coated.

Baking

  1. 6

    Spread the mixture

Spread the granola mixture evenly onto the prepared baking sheet, making sure it's in an even layer.

  2. 7

    Bake

Bake in the preheated oven for 25-30 minutes, stirring halfway through to ensure even toasting. Bake until golden brown and fragrant.

Finishing Touches

  1. 8

    Add fresh peaches

Once the granola is out of the oven, let it cool for about 10 minutes, then fold in the diced fresh peaches.

  2. 9

    Cool and store

Allow the granola to cool completely on the baking sheet before transferring it to an airtight container for storage.
