Gelato Base Preparation

    Heat the Milk and Cream

    In a medium saucepan, combine the whole milk and heavy cream. Heat over medium heat until the mixture is hot but not boiling, stirring occasionally.

    Whisk the Egg Yolks and Sugar

    In a separate bowl, whisk together the egg yolks and granulated sugar until the mixture is pale and slightly thickened.

    Temper the Egg Mixture

    Slowly pour the hot milk and cream mixture into the egg yolk mixture, whisking constantly to temper the eggs and prevent them from scrambling.

    Cook the Mixture

    Return the mixture to the saucepan and cook over medium heat, stirring constantly, until it thickens enough to coat the back of a spoon (about 5-7 minutes). Do not let it boil.

    Add Vanilla Extract

    Remove from heat and stir in the vanilla extract. Allow the mixture to cool to room temperature, then refrigerate until chilled (at least 2 hours).

Flavoring and Churning

    Add Flavorings

    Once the base is chilled, divide it into three portions. To the first portion, add chocolate syrup; to the second portion, add pureed strawberries; and to the third portion, mix in matcha powder. Stir each mixture until fully combined.

    Churn the Gelato

    Pour each flavored mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

    Freeze the Gelato

    Transfer the gelato to airtight containers and freeze for at least 4 hours or until firm.
