    Prepare the Vegetables

    Wash the spinach and pat it dry. Chop the tomato into small cubes.

Cooking

    Sauté the Spinach and Tomato

    In a non-stick skillet, heat the olive oil over medium heat. Add the chopped tomato and sauté for about 2 minutes until softened. Then, add the spinach and cook until wilted, about 1-2 minutes.

    Cook the Egg Whites

    Pour the egg whites over the sautéed vegetables in the skillet. Season with salt and black pepper. Cook on medium heat, stirring occasionally, until the egg whites are fully cooked and no longer runny, about 3-4 minutes.

    Add the Swiss Cheese

    Once the egg whites are cooked, sprinkle the Swiss cheese on top. Cover the skillet with a lid and let it sit for an additional 1-2 minutes until the cheese melts.
