Preparation
- 1
Prepare Chicken
Preheat your oven to 375°F (190°C). Season both sides of the chicken breasts with salt and black pepper.
- 2
Dredging Station
Set up a dredging station with three shallow dishes. Place flour in the first dish, beaten eggs in the second dish, and a mixture of breadcrumbs and Parmesan cheese in the third dish.
Cooking
- 3
Bread the Chicken
Dredge each chicken breast in flour, shaking off excess, then dip it in the beaten eggs, and finally coat it with the breadcrumb and Parmesan mixture. Ensure each piece is well coated.
- 4
Fry the Chicken
In a large skillet, heat the olive oil over medium heat. Once hot, add the breaded chicken breasts and fry for about 4-5 minutes on each side until golden brown and cooked through.
- 5
Assemble the Dish
Transfer the fried chicken to a baking dish. Spoon marinara sauce over each piece of chicken, then sprinkle mozzarella cheese on top.
- 6
Bake
Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the cheese is melted and bubbly.
Serving
- 7
Garnish and Serve
If using, sprinkle fresh basil on top before serving. Serve hot with a side of pasta or salad.
