    Season the Filet Mignon

    Pat the filet mignon dry with paper towels. Season both sides generously with salt, black pepper, and garlic powder. Allow the steak to sit at room temperature for about 30 minutes before cooking.

    Sear the Steak

    In a heavy skillet (preferably cast iron), heat the olive oil over medium-high heat until it's shimmering. Carefully place the filet mignon in the skillet and sear for about 4-5 minutes on one side without moving it to develop a nice crust.

    Flip and Finish Cooking

    Using tongs, flip the steak and cook for another 3-4 minutes for medium-rare, or until it reaches your desired doneness (internal temperature of 130°F for medium-rare). If using, add the butter and fresh rosemary to the pan during the last minute of cooking, spooning the melted butter over the steak.

    Remove the filet mignon from the skillet and place it on a cutting board. Tent it loosely with aluminum foil and let it rest for 5-10 minutes before slicing.
