Prepare the Broth
In a saucepan, heat the vegetable broth over low heat and keep it warm while you prepare the risotto.

Sauté Vegetables
In a large skillet or saucepan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté for 3-4 minutes until translucent.

Add Rice
Stir in the Arborio rice and cook for 1-2 minutes, allowing it to toast slightly in the oil.
Cooking the Risotto

Deglaze with Wine
Pour the white wine into the pan, stirring continuously until it is mostly absorbed by the rice.

Add Broth Gradually
Begin adding the warm vegetable broth, one ladle at a time. Stir frequently and only add more broth once the previous amount has been absorbed. Continue this process for about 15-20 minutes.

Incorporate Vegetables
After about 10 minutes of cooking, add the diced zucchini, bell pepper, carrot, and peas to the mixture. Stir well to incorporate.

Finish with Spinach
When the rice is al dente and creamy, stir in the chopped spinach and let it wilt for about 2 minutes.

Add Cheese and Season
Remove from heat and stir in the grated Parmesan cheese. Season with salt and black pepper to taste.

Serve the risotto warm, garnished with additional Parmesan cheese or fresh herbs if desired.
