Make the Dough
In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and crack the eggs into the well. Using a fork, gradually mix the flour into the eggs until a rough dough forms.

Knead the Dough
Transfer the dough onto a floured surface and knead for about 8-10 minutes, until smooth and elastic. Wrap in plastic wrap and let it rest for at least 30 minutes.

Roll the Dough
After resting, divide the dough into smaller pieces. Using a pasta machine or rolling pin, roll out each piece to your desired thickness, then cut into tagliolini strips.
Blood Orange Sauce Preparation

Juice the Blood Oranges
Cut the blood oranges in half and juice them into a bowl, discarding any seeds. You should have about 1/2 cup of juice.

Add Orange Juice
Pour in the blood orange juice along with honey and red chili flakes. Bring to a simmer and let it cook for about 5-7 minutes, allowing it to reduce slightly. Season with salt to taste.

Finish the Sauce
Remove from heat and stir in the chopped basil and parsley. Set aside.
Combine and Serve

Cook the Pasta
In a large pot of salted boiling water, cook the tagliolini for 2-3 minutes or until al dente. Drain the pasta, reserving a bit of the pasta water.

Mix with Sauce
In a large serving bowl, combine the drained tagliolini with the blood orange sauce. If the sauce is too thick, add a little reserved pasta water to reach your desired consistency.

Serve immediately, garnished with additional fresh herbs if desired.
