Pork Secreto Preparation

    Marinate the Pork

    In a bowl, combine the olive oil, salt, and black pepper. Rub this mixture all over the pork secreto and let it marinate for at least 30 minutes.

    Preheat your grill or skillet over medium-high heat. Cook the pork secreto for about 6-8 minutes per side, or until it reaches an internal temperature of 145°F (63°C). Remove from heat and let it rest for 5 minutes before slicing.

Romesco Sauce Preparation

    Blend the Ingredients

    In a blender, combine the roasted red peppers, tomatoes, almonds, garlic, red wine vinegar, olive oil, and smoked paprika. Blend until smooth and season with salt to taste.

Peach Salsa Preparation

    Chop the Ingredients

    Dice the fresh peaches and red onion. Finely chop the cilantro. In a bowl, combine the diced peaches, red onion, cilantro, lime juice, and salt. Mix well and let it sit for about 10 minutes to meld the flavors.

Focaccia Preparation

    Prepare the Dough

    In a large bowl, combine the warm water and active dry yeast. Let it sit for about 5 minutes until frothy. Add the flour, olive oil, and salt. Mix until a dough forms.

    Knead the dough on a floured surface for about 10 minutes until smooth. Place it in a greased bowl, cover with a damp cloth, and let it rise for 1 hour in a warm place.

    Bake the Focaccia

    Preheat the oven to 425°F (220°C). Punch down the risen dough and spread it in a greased baking pan. Drizzle with olive oil and use your fingers to make dimples in the surface. Bake for 20-25 minutes until golden brown.
