Preparation of Picanha

    Season the Meat

    Rub the picanha with salt and black pepper evenly on all sides. Let it sit at room temperature for about 30 minutes to absorb the flavors.

    Preheat the Grill

    While the meat is resting, preheat your grill to high heat, aiming for around 450°F (232°C).

Grilling the Picanha

    Grill the Picanha

    Once the grill is hot, place the picanha fat side down on the grill. Grill for about 5-7 minutes until a nice crust forms. Flip it over and grill for another 5-7 minutes for medium-rare.

    Rest the Meat

    Remove the picanha from the grill and let it rest on a cutting board for at least 10 minutes before slicing.

Serving

    Slice and Serve

    Slice the picanha against the grain into thin pieces. Serve with pickle relish and capers on the side.

    Slice the focaccia bread and serve it alongside the picanha for a complete meal.
