Prepare Okra Ribs

Preheat the Oven
Preheat your oven to 200°C (400°F).

Prepare the Okra
Wash the okra under cold water and pat dry with a clean towel. Trim the ends and cut each okra in half lengthwise.

Season the Okra
In a large bowl, combine the olive oil, paprika, garlic powder, salt, and black pepper. Add the okra halves to the bowl and toss until they are well coated.

Bake the Okra
Spread the seasoned okra halves in a single layer on a baking sheet lined with parchment paper. Bake in the preheated oven for 20-25 minutes, or until the okra is crispy and lightly browned.
Make Lime Aioli

Combine Ingredients
In a small bowl, whisk together the mayonnaise, fresh lime juice, and minced garlic until smooth.

Season the Aioli
Add salt and black pepper to taste. Adjust the seasoning as necessary.
Serve

Plate the Dish
Once the okra is done baking, remove it from the oven and let it cool for a minute.

Top with Cheese and Chili
Sprinkle the grated Parmigiano-Reggiano cheese and chili flakes over the hot okra before serving.

Serve the okra ribs hot with the lime aioli on the side for dipping.
