Preparing the Quinoa

Rinse the Quinoa
In a fine mesh strainer, rinse 1 cup of quinoa under cold water to remove bitterness.

Cook the Quinoa
In a saucepan, combine the rinsed quinoa, 2 cups of water, and 0.5 teaspoon of salt. Bring to a boil over medium-high heat.

Simmer
Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy and water is absorbed.

Fluff and Set Aside
Remove from heat, fluff with a fork, and set aside covered.
Roasting the Vegetables

Preheat the Oven
Preheat your oven to 425°F (220°C).

Prepare Vegetables
In a large bowl, combine sliced zucchini, diced bell peppers, and sliced red onion. Drizzle with 2 tablespoons of olive oil, and season with 0.5 teaspoon of salt, 0.5 teaspoon of black pepper, and 1 teaspoon of dried oregano. Toss to coat.

Roast Vegetables
Spread the vegetable mixture on a baking sheet in a single layer. Roast for 20-25 minutes, stirring halfway through until they are tender and slightly charred.
Grilling the Salmon

Prepare Marinade
In a small bowl, whisk together 2 tablespoons of olive oil, 2 tablespoons of lemon juice, minced garlic, 1 teaspoon of salt, 0.5 teaspoon of black pepper, and chopped dill.

Marinate Salmon
Place the salmon fillets in a shallow dish and pour the marinade over them. Let them marinate for at least 15 minutes.
