Melt Chocolate and Butter
In a heatproof bowl, combine the dark chocolate and unsalted butter. Place the bowl over a pot of simmering water (double boiler method) and stir until fully melted and smooth. Remove from heat.

Mix Sugar and Eggs
In a separate bowl, whisk together the granulated sugar and large eggs until the mixture is pale and slightly thickened.

Add Flour and Vanilla
Sift the all-purpose flour into the mixture and add the vanilla extract. Fold gently until just combined; do not overmix.

Fill Ramekins
Divide the batter evenly among the prepared ramekins, filling each about 2/3 full.

Bake
Place the ramekins in the preheated oven and bake for 10-12 minutes. The edges should be set while the center remains soft.

Cool and Unmold
Remove from the oven and let the fondants cool for 1 minute. Carefully run a knife around the edges and invert onto individual plates.
Serving

Serve with Ice Cream
Top each fondant with a scoop of vanilla ice cream and garnish with fresh mint leaves. Serve immediately while the inside is still warm and gooey.
