Season the Chicken
Season the chicken thighs with salt and black pepper on all sides.

Sauté the Aromatics
In a large pot or Dutch oven, heat a tablespoon of oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion becomes translucent.

Brown the Chicken
Add the seasoned chicken thighs to the pot and brown on both sides, about 5 minutes per side.

Add Vegetables and Broth
Once the chicken is browned, add the chopped carrots, celery, chicken broth, bay leaves, thyme, and any additional salt and pepper to taste. Bring to a boil.

Simmer the Soup
Reduce the heat to low, cover the pot, and let the soup simmer for 30-40 minutes until the chicken is cooked through and tender.

Shred the Chicken
Remove the chicken thighs from the pot, let cool slightly, then shred the meat into bite-sized pieces and return to the soup.

Add Fresh Ingredients
If using, add noodles or rice and let cook according to package instructions. Stir in the chopped parsley and lemon juice before serving.
