Roasting the Beets
Preheat your oven to 400°F (200°C). Wash the beets thoroughly and trim the tops and bottoms. Wrap each beet in aluminum foil and place them on a baking sheet. Roast in the preheated oven for about 45-60 minutes, or until they are tender when pierced with a fork.

Smoking the Apple
Core and slice the apple into wedges. Use a stovetop smoker or a smoking gun to smoke the apple wedges for about 10-15 minutes, until they have a nice smoky flavor. If you don't have a smoker, you can skip this step or use liquid smoke for flavor.

Roasting the Hazelnuts
Preheat a skillet over medium heat. Add the hazelnuts and toast them, stirring frequently, for about 5-7 minutes, or until they are golden brown and fragrant. Remove from heat and let them cool. Once cooled, chop roughly.

Combining Ingredients
In a large serving bowl, combine the roasted beet wedges, smoked apple wedges, and chopped hazelnuts. Crumble the bleu cheese on top. Drizzle with olive oil and season with salt and black pepper to taste. Toss gently to combine.
