Prepare the Brown Butter Mayonnaise

In a small saucepan, melt butter over medium heat. Continue to cook until it turns golden brown and has a nutty aroma. Remove from heat and let cool slightly. In a bowl, whisk together egg yolk, Dijon mustard, and Worcestershire sauce. Slowly drizzle in the brown butter while whisking until emulsified. Season with salt and pepper to taste.

Combine the Tartare Ingredients

In a mixing bowl, combine the finely diced beef tenderloin, egg yolk, chopped capers, shallot, and chopped hazelnuts. Add salt and freshly ground black pepper to taste. Mix gently until well combined.

Serve

Spoon the beef tartare mixture onto serving plates. Drizzle with brown butter mayonnaise and serve with slices of baguette on the side.
