Sorbet Directions

    Prepare the Fruit

    Wash and chop the fresh fruit into small pieces. If using citrus, juice the fruit.

    Blend Ingredients

    In a blender, combine the chopped fruit, sugar, water, and lemon juice. Blend until smooth.

    Chill the Mixture

    Pour the mixture into a bowl and refrigerate for at least 1 hour until chilled.

    Freeze

    Pour the chilled mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency. Transfer to a container and freeze for at least 4 hours.

    Heat the Cream and Milk

    In a saucepan, combine heavy cream, whole milk, and sugar. Heat over medium heat until the mixture is warm, but not boiling.

    Whisk Egg Yolks

    In a separate bowl, whisk the egg yolks until they become pale and slightly thickened.

    Temper the Egg Yolks

    Slowly pour about 1 cup of the warm cream mixture into the egg yolks while whisking continuously to temper them.

    Combine and Thicken

    Pour the tempered egg yolk mixture back into the saucepan with the remaining cream mixture. Cook over low heat, stirring constantly, until the mixture thickens enough to coat the back of a spoon.

    Cool and Flavor

    Remove from heat and stir in the vanilla extract. Allow to cool to room temperature, then refrigerate until cold.

    Freeze

    Churn the cold mixture in an ice cream maker according to the manufacturer's instructions. Transfer to a container and freeze until firm.
