Method

Peach Cake

Prepare the Cake

Preheat the oven to 350°F (175°C). Grease and flour a cake pan.

In a large bowl, whisk together flour, sugar, baking powder, and salt. Add softened butter and mix until crumbly.

Add eggs, vanilla extract, and diced peaches. Mix until combined.

Pour the batter into the prepared pan and bake for 30-35 minutes or until a toothpick comes out clean.

Peach Mousse

Make the Mousse

In a small bowl, sprinkle gelatin over water and let it sit for 5 minutes to bloom.

In a large bowl, whip the heavy cream with powdered sugar until soft peaks form.

Gently fold in the pureed peaches and the bloomed gelatin until just combined. Refrigerate until set.

Miso Roasted Peaches

Roast the Peaches

Preheat the oven to 400°F (200°C).

In a bowl, mix miso, honey, and olive oil. Brush this mixture on the cut sides of the peaches.

Place peaches cut-side up on a baking sheet and roast for about 20 minutes.

Raspberry Caramel

Prepare Raspberry Caramel

In a saucepan, combine sugar and water over medium heat.

Cook until the sugar dissolves and turns a light amber color. Add raspberries and simmer until they break down. Strain and cool.

Raspberry Crumb

Make the Crumb

In a bowl, combine flour, brown sugar, oats, and melted butter.

Mix until crumbly and sprinkle over the peach cake before serving.

Candied Cashews

Candy the Cashews

In a saucepan, combine sugar and water over medium heat until it dissolves.

Add cashews and stir continuously until they are coated and caramelized. Spread on parchment to cool.

Raspberry Sherbet

Prepare the Sherbet

In a bowl, combine pureed raspberries, sugar, lemon juice, and water.

Chill the mixture and churn in an ice cream maker until creamy. Freeze until firm.
