Prepare the Cure
In a mixing bowl, combine sea salt, brown sugar, and crushed black peppercorns.

Cure the Salmon
Place half of the cure mixture in a shallow dish. Lay the salmon skin-side down on top of the cure, then cover the salmon with the remaining cure. Top with fresh dill, cover with plastic wrap, and refrigerate for 48 hours.

Rinse and Slice
After 48 hours, remove the salmon from the cure, rinse under cold water, and pat dry with paper towels. Slice the salmon thinly at an angle.
