    Prepare the Pork T-bone

    Season the pork T-bones with salt, black pepper, and thyme. Heat olive oil in a skillet over medium-high heat. Sear the pork for 4-5 minutes on each side until golden brown and cooked to your preferred doneness. Remove from heat and let rest.

    Cook the Bacon and Onions

    In the same skillet, add the bacon and cook until crispy. Remove the bacon and set aside. In the bacon fat, add the cipollini onions and sauté until they are caramelized and tender.

    Prepare the Garlic Kale

    In a separate pan, heat a little olive oil over medium heat. Add chopped kale and minced garlic, sautéing until the kale is wilted and tender. Season with salt and pepper to taste.

    Roast the Delicata Squash

    Preheat the oven to 400°F (200°C). Slice the delicata squash and remove the seeds. Toss with olive oil, salt, and black pepper. Roast in the oven for 25-30 minutes until tender and slightly caramelized.

    Plate the Dish

    On a large plate, place the garlic kale as the base, top with the resting pork T-bone, add the caramelized cipollini onions, crispy bacon, and roasted delicata squash. Drizzle with pork reduction sauce and serve with apple mostarda on the side.
