Roast the Apples
Core and quarter the apples, and place them around the hens in the roasting pan. Roast in the oven for 20 minutes.

Prepare the Cauliflower
Cut the heirloom cauliflower into florets. Toss with olive oil, salt, and pepper, and place on a baking sheet. Roast for 25-30 minutes until tender.

Crispy Prosciutto
In a skillet, cook the prosciutto slices until crispy. Remove and place on paper towels.

Make the Pomegranate Gastrique
In a saucepan, reduce the pomegranate juice over medium heat until thickened. Set aside.

Prepare the Chicken Reduction
In the same pan used for the prosciutto, add chicken stock and brandy. Reduce until thickened. Season to taste.

Arrange the roasted Cornish hens on a plate with heirloom cauliflower, curried carrots, and crispy prosciutto. Drizzle with pomegranate gastrique and brandy chicken reduction.
