Preparation Steps

  1. 1

    Prepare the Cornish Hens

Preheat the oven to 375°F (190°C). Season the Cornish hens with salt, pepper, and olive oil. Place them in a roasting pan.

  2. 2

    Roast the Apples

Core and quarter the apples, and place them around the hens in the roasting pan. Roast in the oven for 20 minutes.

  3. 3

    Prepare the Cauliflower

Cut the heirloom cauliflower into florets. Toss with olive oil, salt, and pepper, and place on a baking sheet. Roast for 25-30 minutes until tender.

  4. 4

    Cook the Carrots

Peel and slice the carrots. In a pan, heat olive oil, add curry powder, and sauté the carrots until tender.

  5. 5

    Crispy Prosciutto

In a skillet, cook the prosciutto slices until crispy. Remove and place on paper towels.

  6. 6

    Make the Pomegranate Gastrique

In a saucepan, reduce the pomegranate juice over medium heat until thickened. Set aside.

  7. 7

    Prepare the Chicken Reduction

In the same pan used for the prosciutto, add chicken stock and brandy. Reduce until thickened. Season to taste.

  8. 8

    Serve

Arrange the roasted Cornish hens on a plate with heirloom cauliflower, curried carrots, and crispy prosciutto. Drizzle with pomegranate gastrique and brandy chicken reduction.
