Brussels Sprouts with Bacon, Apple, Cippolini Onion, and Sunchoke Chips

    Cook the Bacon

    In a large skillet, cook the bacon over medium heat until crispy. Remove the bacon from the skillet and place it on a paper towel to drain excess fat. Leave about 1 tablespoon of bacon grease in the skillet.

    Sauté the Onions

    Add the sliced cippolini onions to the skillet with the bacon grease and sauté over medium heat until they are soft and translucent, about 5-7 minutes.

    Prepare the Brussels Sprouts

    While the onions are cooking, trim and halve the Brussels sprouts. Add them to the skillet with the onions and drizzle with olive oil. Season with salt and pepper. Cook for about 8-10 minutes, stirring occasionally, until the Brussels sprouts are tender and caramelized.

    Add the Apple

    Core and chop the apple into bite-sized pieces. Add the apple to the skillet and cook for an additional 3-5 minutes until the apples are slightly softened.

    Combine with Bacon

    Crumble the cooked bacon and add it back to the skillet. Stir everything together to combine well.

    Serve with Sunchoke Chips

    Plate the Brussels sprout mixture and top with sunchoke chips for added crunch. Serve warm.
